Columella's Mustard

Roman mustard recipe based on Columella (De Re Rustica 12:57:2).

  • 3 tbsp White Mustard Seeds Ground
  • 1 tbsp Pine Nuts
  • 1 tbsp Almonds Ground
  • 1/4 cup Wine Vinegar


  • You may use either already ground white mustard seeds and almonds or grind them into a fine powder using a mortar and pestle.
  • Grind pine nuts with mortar and pestle into a paste.
  • Add wine vinegar to ground mustard, pine nuts and almonds and mix well.
  • Let the mixture sit for 1 hour so that it will thicken. Serve.


For a more authentic taste use wine vinegar from Spain, either Sherry or Sweet Moscatel, which have a stronger taste, or Sweet Pedro Ximenez vinegar, which has a milder taste. All of the above mentioned vinegars are made based on recipes closer to what the Romans would have used. A very good brand of Spanish wine vinegars is Los Villares, which can be purchased in Whole Foods Supermarkets throughout the US.
